Why is CalMex food better than TexMex
I have eaten at both States and know all Calif cities and Tex cities but when it comes to food California beats Texas. In Texas Guacamole is still a new thing but thanks to “Taco Bell” an Irvine,California based chain who took it over there. But theres is lots of great food the little cowboy Texas is still missing like the Chimichangas and the Baja California Fish Tacos ask a Texan and he wont know what hell they are unless they visited Sunny Califonia. I believe the Texan soil is at fault for it not producing fresh herbs and spices as Californians have always relied the land to do. When in Texas Ask for a fish Taco, And in Houston they go WTF oh it’s another Californian!! and another thing if you are Californian you are taller than average Texan must be in the Californian food or the Freash Ocean breeze, you will be considered a giant redwood walking with little TexMex fed Texans.
Texans no offense its just true we are big USC sons of guns.
CalMex food, or Taco bell type food , are adaptations of Mexican cuisine with Caucassian sensibilities in mind; heavy use of cheese and tomato sauces, tortilla shells instead of plain tortillas, no deep frying,etc. Tex Mex food is geared towards Mexican Americans, who also like a lot of cheese but have more conection to the original Mexican cuisine, fried tacos, flour and corn tortillas, etc. Fish Tacos are originally from the western states of Mexico and has therefore influenced the western US states. Mexican influence in Texas is mainly from Nuevo Leon and San Luis Potosi states, landlocked states where seafood is not very common. Guacamole is by no means anything new in Texas.
